Year ago (like 19), I worked in an office for two different companies. One worked with hospitals to help them with the hospital administrations, and the other was the middle man between doctors and hospitals for staffing the emergency rooms. I really enjoyed that job. I only worked there for about six months. I found the job through a temp agency and was later hired on by the company. The people I worked with were all so fun, and it was a great work environment. One of the women that I worked with had brought some salsa into work one day and it was delicious, and I knew I needed the recipe! I was so excited when I got it, and even more surprised at how easy it was! For this 5-Minute Easy Salsa, start by collecting your ingredients. You’ll need vegetable oil, a lemon (sometimes I used bottled lemon juice), green onion, lemon pepper, black beans, Rotel, and frozen or canned corn. This is one of those recipes that you can’t mess up. It is that easy!
All you do is place everything into a bowl and mix!
It tastes great after it’s been chilled, but it also tastes great as soon as you put it together!
Our favorite kind of chips to eat it with are Mission chips. We love the giant bags you can get at Costco. They are the Kirkland chips, but if you look at the bag, they are from Mission. We buy about four of these bags at a time. We love corn chips at our house and can go through one of those big bags in less than a week sometimes.

5-Minute Easy Salsa
With this 5-Minute Easy Salsa recipe you're mouth won't be watering for long before you get to taste it!
Ingredients
- 2 large cans Rotel with juices (I prefer Milder, but any kind will work)
- 2 cans black beans - drained
- 2 cans corn - drained, or 1 1/2 cups frozen corn
- 5-6 green onions - chopped
- 1-2 Tbsp lemon pepper
- 1 lemon - juiced
- 2 Tbsp vegetable oil
Instructions
- Place all ingredients in bowl. Stir. Enjoy or chill until ready to serve. Lemon pepper may be adjusted to taste.
