A few days ago, we returned home from a week long road trip. We haven’t ever taken a family trip quite like this one before. My husband and I took our five boys to the Oregon Coast, where we visited as a couple last September. It was so dreamy then, that we knew we wanted to take our family back. Traveling with five kids vs. as a couple is so different! We enjoyed the trip in different ways this time around. It was so fun to take our boys to some of the fun places we had visited several months ago. Traveling is something that I hope we can continue to do with our family. Our oldest will be starting his Junior year of high school in a few weeks so we don’t have very many summers left with him! It is a little crazy to think about how quickly the last 16 years have gone by. I’m trying to soak it all in the best that I can!! Anyone else feel the same way? ANYWAY, today I want to share this Cherry Egg Roll Dessert recipe with you. This is something that we came up with last summer, and I never did get it shared, but it is so delicious that it is still worth sharing! This Cherry Egg Roll Dessert recipe is one of those that we just kind of put together and it turned out amazing!
Sunday afternoons seem to be the day that we like to experiment, especially when it comes to desserts. That is the day that we’re most likely to make dessert. Anyone else?
Sometimes our dessert ideas simply come from leftover foods that we have in the fridge. That is what happened when we came up with this Cherry Egg Roll Dessert recipe. We had some cherries that needed to be used up, as well as the egg roll wraps and it got us thinking.
As with any dessert, we decided to start by adding some sugar. And honestly, there are several different kinds of fruit that you could do this same things with. Apples, berries, etc. It could be delicious!
Also, cream cheese. It makes almost anything that much better, right? I love it. The one other thing I could have added to this is whipping cream. I literally eat that stuff by the spoon full when it is whipped up. Side note: Have you ever made it with your Kitchen Aid? It’s my favorite quick way to make whipping cream.
I was actually surprised that I had any leftover egg roll wrappers to use for these, because we usually use all of them up when we make egg rolls. I should share that recipe sometime.
While I know this isn’t a typical post for The Happy Scraps, I knew it was one that I wanted to share. Note: Do be careful when using hot oil to fry things. If you haven’t done it before, research how to do it before you try it. It is worth knowing how to do it.
When we experiment with cooking, I know it would never turn out as well if it was just me. My husband has it figured out pretty well how to mix flavors. Adding the cinnamon and sugar to the outside of the egg roll wrapper for this recipe was his idea, and boy it was a good one.
With most delicious warm dessert recipes, ice cream is always a good idea as well.
Not only did we top this with some ice cream, but we drizzled some of the cherry juice with cinnamon and sugar + sweetened condensed milk over the top of the ice cream. I promise, this Cherry Egg Roll Dessert does not disappoint!
Here is the recipe. Like I mentioned before, we didn’t measure, we just dumped, so the measurements here are guesses. Do it to taste, and really, as long as you don’t add too much cinnamon, I don’t think you could mess this recipe up too bad. 😉
