White Chocolate Gingerbread Truffles

One of the things that I have loved making for years, is Oreo Truffles. Well, the other day, I was making some Gingerbread Cookies, and I told my husband, maybe I should try making some Gingerbread Truffles. We talked about it and these delicious White Chocolate Gingerbread Truffles were born! They just take a few simple ingredients.

You’ll need:

  • Gingerbread Cookies (about 2 cups once crushed)
  • 8 oz. Cream Cheese
  • White Chocolate Vanilla Almond Bark
  • Cinnamon & Sugar Topping

When I made my Gingerbread Cookies, I used this recipe. I chilled the dough, then rolled it out, used the cookie cutter and baked for 12 minutes. You can also purchase the cookbook that has it here. I highly recommend any cookbook from Lemon Poppy! They are A.MAZ.ING!!

I put my baked gingerbread men into the food processor.

Turned them into crumbs.

I put the crumbs into a gallon size zip lock bag. I put the whole cube of cream cheese in the bag as well.

Using my hand, I mixed them up together, until I couldn’t see anymore white.

I rolled the mixture into balls. I love using my tablespoon sized scoop. It gives me the perfect amount to roll into a ball. Put the balls into the refrigerator to chill for a little bit.

Using a double boiler, melt some of your chocolate. I don’t ever do more than three cubes at a time. I also don’t have a fancy double boiler, I just use a glass bowl, on a pot full of water.

Once the chocolate is melted, dip your chilled balls into the chocolate.

Put the chocolate covered balls onto a wax paper lined baking sheet. Sprinkle with cinnamon and sugar.

Not only does the cinnamon and sugar topping make these look pretty, but it adds that extra bit of flavor that is yummy!

These White Chocolate Gingerbread Truffles are so simple to make and would be the perfect thing to give to neighbors or friends during the holiday season. Or you could just keep them and enjoy them yourself. 🙂 These would also be a fun treat for New Year’s Eve.
